The location of BODEGAS PERFER in Uleila del Campo is unique. We are located deep into the Desert of Almeria (Andalucía), the only desert in Europe and a few km. from our beloved Mediterranean Sea.
Juan Perez is a third-generation winemaker and his wine creations perfectly reflect the traditional Mediterranean culture of his family combined with his entrepreneurial spirit.
High quality wines must begin with the best grapes, and viticulture has a great importance to us.
The winery counts with 30 hectares of cultivated varieties like Chardonnay, Tempranillo, Merlot, Grenache and Cabernet Sauvignon, with a planting of 2.25 x 1.50.
The vines are trellised in double cordon supporting a weight of 2.5 kg per strain. Thinning of clusters takes place in order to achieve the ideal weight near the ripening dates, leaving the best clusters homogeneously distributed along the strain. The branches are blunt to facilitate the sap to ripen the vines instead of favouring vegetative growth.
It is important to have enough leaf mass around the cluster to protect them from midday heat strokes common in our extreme climate.
The low rainfall levels requires the use of drip irrigation, carefully programmed to avoid excess water and promote proper ripening.
From the moment of veraison or colouring, which differs for each grape variety, weekly monitoring of ripening begins, and a daily quality control takes place near to harvesting time.
Due to the altitude and weather conditions the harvest in this area is carried out earlier than in other wine regions of Almeria, taking place in late August.
The harvest is manual, hand-picking only the bunches that are in perfect phytosanitary and ripening conditions. After transportation to the cellar in boxes of 10 kg, a second manual selection of the best bunches is performed just before grinding.
The strict traceability of the vines allows us to have excellent raw material for wine making.
Our wines are fermented separately in stainless steel tanks at controlled temperature of about 28 ° C, followed by a maceration with the skins for about 25 days. After this period we start the malolactic fermentation.
For aging varietal wines we use French and American oak barrels, also coupages of different wines are made and bottled.
